做法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放(fàng )两勺(sháo )油(yóu ),待油六成热下鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫(jì )鱼和其他(tā )材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个(gè )半小时,下盐调味即可品尝。 -
