做法:春笋切(qiē )成片(piàn )后(hòu )加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。 -
